Guatemala · Why Eight Coffee Regions?

One country. Eight distinct cup profiles.

Guatemala’s eight coffee regions are not arbitrary marketing divisions. Anacafé formalized them to identify recurring cup profiles created by the country’s unusually varied geography: mountain ranges, active volcanoes, crater lakes, two oceans, different soil types, altitude and rainfall patterns. Together these conditions create more than 300 microclimates, which change how coffee cherries mature and how sweetness, acidity, aroma and body develop in the cup.

Why terroir changes the coffee

At higher elevations, cooler temperatures generally slow cherry maturation, giving the seed more time to develop dense sugars and aromatic precursors. Volcanic and mineral-rich soils, rainfall, cloud cover, humidity, wind and shade then interact differently from region to region. Anacafé’s regionalization strategy, introduced in the 1990s, grouped these recurring environmental and sensory differences into eight recognized Guatemalan coffee origins.

Role in the experience: Softens acidity and emphasizes sweetness, caramel and roundness in the coffee.

The milk chocolate is paired with one coffee in each collection to create a gentler contrast and make sweetness, texture and aromatic shifts easy to notice.

Kampura 70%

Farm: Finca Kampura, Izabal
Style: Single-origin 70% dark chocolate
Published profile: Floral and complex, with chocolate, light acidity, grapefruit, berries and tropical fruit.

Kampura brings a darker cacao structure and fruit-driven complexity to the second coffee in every collection, allowing the pairing to emphasize acidity, fruit, roast, cacao and finish.
